Cajun Beef Wraps
These colorful, spicy tortillas are extremely delicious AND easy to prepare (a combo we love). We used lean ground beef as the base for our wraps but you can replace the ground beef with chopped chicken or turkey breast, veal, or even chopped pieces of beef. If you do decide to use ground beef, like in this recipe, make sure to buy high-quality pieces for the best possible flavor. If possible, ask your butcher to prepare a few pieces of beef neck or shoulder and to trim off any extra fat.
When it comes to Cajun spice blend, you can use some of the store-bought ones, but making your own is a lot of fun and you can create your personal flavor balance of different herbs and spices. You can also add a pinch of chili powder in the mixture for some extra spice, although that probably won’t be necessary if you’re using chili peppers.
You will need:
1 lb. lean ground beef
¼ cup drained sweet corn
¼ cup kidney beans
2 purple onions
1 red pepper
2 chili pepper
7-8 lettuce leaves
For cajun seasoning:
1 tsp salt
3 tsp smoked paprika
2 tsp cayenne pepper
¾ tsp freshly ground black pepper
1 tsp dried thyme
3 tsp Italian seasoning mix
1 tsp garlic powder
1 tsp onion powder
First, prepare the cajun seasoning mix. Combine all herbs and spices in a small bowl and mix well. Set aside.
Add the meat to a medium bowl and season with two teaspoons of the cajun mixture (reserve the remaining mixture for later). Mix all well and set aside.
Wash and prepare the vegetables. Finely chop onions, slice peppers, drain corn and kidney beans.
Now, light your Breeo® Fire pit by adding a couple of dry branches and starting the fire with wooden matches. Let the fire burn for 3-4 minutes and then add 7-8 hardwood logs. Lower the grill until right above the fire.
Grease a large cast iron pan with oil and place on the grill. Heat up and then add finely chopped onions. Cook for 3-4 minutes, stirring constantly.
Now, add the ground beef and continue stirring occasionally for 6-7 minutes. If necessary, add some more hardwood logs.
Remove the meat from the grill and cool for a while.
Meanwhile, prepare tortillas. Sprinkle each tortilla with some water (or olive oil) and microwave for 20-30 seconds or according to package instructions.
Place one lettuce leaf at the middle of each tortilla and add the remaining ingredients, one at a time – kidney beans, corn, sliced red pepper, chili peppers, and finally the meat.
Optionally, sprinkle with some more Cajun seasoning and wrap. Secure tortillas with some toothpicks.
Serve these wraps with your favorite dips or sauces – we used classic tomato salsa and some garlic sauce and it was fantastic! Have fun!
