Cooking with Breeo: Honey-Lemon Cottage Cheese Pancakes

If your go-to pancake recipe needs a revamp, this one is for you.

We get it, cottage cheese pancakes sounds like a stretch for your taste buds, but we’re here to tell you that the light, fluffy, and absolutely delicious end result will have you adding it to your weekly breakfast menu in no time.

What You’ll Need

Pancakes

1 ½ cups Flour

6 Eggs, lightly beaten

16 oz. Cottage Cheese

2 tbsp. Butter, melted

½ tsp. Salt

1 tsp. Baking Powder

1 tbsp. Baking Soda

2 tbsp. Honey

2 tsp. Vanilla

1 tsp. Lemon Zest

Blueberries (optional)

Strawberries (optional)


Pancake Syrup

2 tbsp. Butter, melted

1 cup Whipping Cream

1 cup Sugar

2 tsp Flour

Vanilla

Preparation

1. Start a fire in your X Series fire and add the Outpost Grill.

2. Begin with the pancake syrup by mixing the melted butter, heavy cream, sugar, and flour in a small pot.

3. Place the syrup mixture on the Outpost grill over medium heat making sure to stir it occasionally.

4. For the pancakes, whisk the eggs into the flour and follow with the cottage cheese. Give the batter another stir.

5. Add the butter, salt, baking soda, baking powder, honey, vanilla, and lemon zest to the batter and stir.

6. Once the syrup is boiling, remove it from the heat, add the vanilla, and let it sit and thicken while the pancakes are cooking.

7. Add the SearPlate Griddle to your setup once a bed of coals has built up in the bottom of your fire pit.

8. Once the griddle is up to temp (350-400°F) you’re ready to get cooking.

Live-Fire Cooking Pro Tip: If you’re not sure if the griddle is hot enough, try a test pancake first.

9. Once you’ve placed the pancakes on the griddle, add blueberries before the first flip.

10. Once the pancakes are fully cooked, top them off with fresh blueberries, strawberries, lemon zest, and of course, your homemade pancake syrup.
