Flatbread Pizza is one of our favorite things to make over the fire – there are endless variations, and it makes for a fun dinner to enjoy in courses!
You will need:
2 pizza-dough balls (you can easily make your own or if you are in a hurry pick some up from Trader Joes or your local pizza place)
1/2 cup Flour
4 cups Arugula
1/4 cup Capers
1 package Prosciutto
1 Pear, thinly sliced
2 cups Roasted squash, cubed
Pecorino shavings, or any other hard cheese that you like
Salt & Pepper
Coat your dough in a layer of flour and let it rest at room temp while you get the fire going. Roll balls out as thinly as possible into a roughly rectangular shape.
Coat one side with flour and place on the grill, flour side down. Brush the top side with Olive oil and if necessary turn over and cook briefly on the other side.
Remove from the heat and add toppings. For this recipe, begin with a layer of arugula, then drizzle with olive oil.
Follow up with the Prosciutto, cheese shavings, and pear slices. Top with squash cubes and a sprinkle of capers, then finish off with a drizzle of balsamic glaze and some freshly ground black pepper.
