Grilled Polenta Cakes

These Grilled Polenta Cakes are a fantastic finger food for families with young kids. Our kids love helping and coming up with their own topping combos whenever we're making these.

As you try this recipe, feel free to explore the endless possibilities of color and flavor with these delicious cakes. They also serve as a great addition to breakfast!

You will need:

2 Rolls Pre-made Polenta, sliced in 3/4’’ thick rounds
1/2 cup Parmesan shavings
1 Avocado, sliced
1/2 Bunch of Basil
1 cup Crème Fraiche
3 cups Cherry Tomatoes
2 Tbsp. Olive Oil
1 Tbsp. Butter
2 Tbsp. Balsamic Vinegar
1/2 Tbsp. Dried Italian Herb Mix
Salt & pepper

Place your tomatoes, olive oil, butter, vinegar, salt & pepper and dried herbs in a pan on the grill, let them cook from 10 min, stirring occasionally.

Add the polenta rounds directly onto the grill, cooking till lightly browned on the underside, then turn over, roughly 7 min. Place the Parmesan shavings on top of each round and allow to melt. Then remove from the grill.

By this time the tomatoes should be getting soft, with the skins blistered. When they are starting to break and become juicy you can remove them from the grill. Scoop a spoonful of tomatoes on top of each cake, then a slice of avocado, a dollop of crème fraiche and finish off with a sprinkle of basil.
