Loaded Baked Potato Soup

We decided to take a few moments to get outside and enjoy the cool Autumn weather at our location here in Lancaster County, Pennsylvania today. As the temperatures continue to fall, we start to crave hot soups and stews more and more. This is a wonderfully rich and hearty soup that will warm you from the inside out. It’s perfect for enjoying after a long day playing in the leaves or hiking in the woods or simply cozied up by the fire. Make this for your friends and family and we can almost guarantee that they’ll start begging you to make it for them every time you’re together!

You will need:

1 Pack Applewood Smoked Bacon

1/2 Cup Butter

1 Onion (medium or large, depending on preference)

2-3 Cloves Garlic

6-8 Potatoes, washed and diced

2 Cups Chicken Broth

1 Cup Heavy Whipping Cream

2 C Chicken Broth

6 C whole milk

1-2 tsp Salt

1-2 tsp Pepper

4 C Cheddar Cheese, shredded

1-2 Bunches Green Onions (diced)

1 C Sour Cream



Assemble your Ablaze or Zentro Kettle Winch onto your Smoke Less fire pit. Hang kettle and allow to heat up a bit. Line bottom of kettle with strips of bacon and cook until crispy. Remove bacon from kettle and allow to cool (do not drain bacon grease from kettle). Add butter to the kettle and melt. Add onion, garlic, and potatoes and stir so that the butter and bacon grease coats all pieces. Add the chicken broth, milk, and heavy cream. Lower kettle to just above the fire and allow soup to simmer until potatoes are cooked through. Stir in shredded cheese. Crumble bacon and stir in, along with the sour cream and green onions. Ladle soup into bowls and top with extra cheese, bacon crumbles, and green onions. Serve with fresh bread.
