This wonderful Italian tomato sauce is a fantastic addition to your next campfire chicken barbecue. Tender and almost overripe tomatoes are gently simmered with a couple of classic spices and the smallest amount of high-quality white wine and transformed into a lovely sauce that goes perfectly with different types of fish and poultry. This time, I have decided to go with everybody’s favorite – chicken drumsticks. In that case, you’ll probably want to marinate your meat for some extra taste.
When it comes to marinating the chicken, there are hundreds of different options but you’ll probably want to keep the vibrant Italian flavor and go with some olive oil, garlic, and herbs. Adding a small amount of chili powder will also give an extra kick to this barbecue classic. However, it’s completely optional. Finally, make sure to finish everything with a decent amount of freshly grated Parmesan or Grana Padano and serve immediately.
6 chicken drumsticks
For the marinade:
1 cup olive oil
3 garlic cloves
1 tsp pink Himalayan salt
1 tbsp fresh basil, finely chopped
1 tbsp fresh parsley, finely chopped
½ tsp freshly ground black pepper
For the sauce:
3 ripe tomatoes
2 medium-sized onions, finely chopped
¼ cup grated Parmesan
1 cup tomato sauce
1 tsp smoked paprika
1 tsp dried celery
½ tsp dried oregano
½ tsp salt
2 tsp sugar
¼ cup white wine
Rinse drumsticks thoroughly under cold running water. Pat dry with a kitchen towel and set aside.
Now, prepare the marinade. Crush garlic in a small bowl and add salt, pepper, basil, parsley, and olive oil. Mix all well and generously brush drumsticks. Refrigerate for 1 hour.
Meanwhile, add a couple of dried wooden branches in your nearly smokeless Breeo fire pit. Start the fire with wooden matches and then add 4-5 hardwood logs. Let the fire burn for 15-20 minutes and then add charcoal – about 20-25 briquets. After about 15 minutes, you will notice the coals starting to glow. Spread the coals over the fire pit and you’re ready to prepare the sauce.
Using a sharp paring knife, peel and finely chop onions. Rinse and chop tomatoes making sure to reserve all the liquid. Set aside.
Lower the grill until it’s right over the pit. Grease a large iron cast skillet with some oil and place on the grill. Heat up and add onions. Cook until translucent, stirring occasionally.
Now, add tomatoes and sprinkle with smoked paprika, dried celery, dried oregano, salt, and sugar. Stir all well and cook for 7-8 minutes. Pour in the tomato sauce and gently simmer until tomatoes have completely softened – about 15-20 minutes. Finally, pour in the wine and continue to cook for 5 more minutes.
Meanwhile, remove drumsticks from the refrigerator. Move the tomato sauce to one side of the grill and add drumsticks. Grill for 4-5 minutes per side, brushing with some of the marinade every couple of minutes.
When done, remove drumsticks from the grill and transfer to the skillet. Sprinkle with grated Parmesan and mix all well. Serve your delicious campfire chicken immediately!
