Steak on a Fire

Cooking a fresh steak over the coals of a wood fire is one of the most tantalizing experiences in the world of outdoor cuisine. Whether it be a sirloin or ribeye, a real fire will add a certain zest that your guests will love. Here are some things to remember when grilling steaks over a fire:

  • Make sure to avoid drying out the steaks by having them too far from the heat. Sear them in the flames to keep them juicy
  • AS SOON as they are done (preferably still slightly rare) get them off the fire and into a heated pan. Leaving them on the fire to stay warm will either burn them or dry them out
  • Go easy on the seasoning. You will be amazed at what the wood smoke will do.
