Sweet Chili Chicken Wings on a Smoke-less Fire Pit
Delicious chicken wings are one of the most popular barbecue choices all over the world. This recipe is a well-known combination of crispy chicken wings and sticky sweet chili sauce everybody loves. There are plenty of different recipes for a good sweet chili sauce, but this particular one will leave you speechless. With the right amount of sweet soy sauce and brown sugar, bitter apple cider and lemon juice, and spicy chili powder and garlic, this recipe will perfectly stick to your grilled chicken wings and guarantee a mind-blowing flavor. Besides, this combination is extremely easy to make – all you need is a good cast iron skillet to cook the ingredients until the excess liquid evaporates and the sauce thickens. And the following is even easier. Sprinkle the wings with some freshly ground black pepper (naturally, you can add some more spices to taste) and grill them until perfectly crispy on the outside and completely cooked on the inside. Drizzle with the sweet chili sauce and you’re good to go!
2lbs chicken wings
¼ cup soy sauce
¼ cup apple cider vinegar
2 tbsp freshly squeezed lemon juice
1 cup brown sugar
½ cup water
3 garlic cloves, sliced
1 tsp red pepper flakes
¾ tsp freshly ground black pepper
1 tsp salt
2 tsp chili powder
3 spring onions
You will begin by starting the fire in your Breeo fire pit. Add a couple of small dry branches in the pit and start the fire with some matches. Carefully add 4-5 hardwood logs, one at the time, allowing them to burn for about 20 minutes. After about 20 minutes, add a couple of charcoal briquettes (8-10 will do the job) and lower the grill until it’s right over the fire pit. When charcoal briquettes start to glow, you’re ready to cook.
Meanwhile, in a medium, iron cast skillet, whisk together soy sauce, water, apple cider vinegar, lemon juice, and sugar. Sprinkle with sliced garlic cloves, red pepper flakes, salt, and chili powder. Place on the grill and cook until half of the liquid has evaporated, for 10-15 minutes, stirring every once in a while. When done, remove from the grill and cool the chili sauce for a while.
Now prepare the chicken wings. Rinse thoroughly under cold running water and drain in a large colander.
Using a silicone brush, generously brush the grill with some oil. Add the wings and sprinkle with freshly ground black pepper. Grill for 4-5 minutes on each side.
When done, remove the wings from the grill and transfer to a large iron dish. Drizzle with chilled chili sauce and leave on the grill for another 10-15 minutes.
Serve with spring onions and a couple of fresh lettuce leaves.
